Pesto Chicken with ZoodlesBy KimI marinate the chicken up ahead of time and store it in a Ziploc laid flat in the freezer until ready to cook. Set out a few hours before dinner to defrost completely before cooking. Zoodles can also be spiralized and frozen or serve this over spaghetti squash or riced cauliflower. I also enjoy Palmini noodles for a change. It's such an easy dish to whip up when marinated ahead on a week night and one that my entire family loves. (I serve the kids' portions over penne) Each serving is 1 leaner, 3 greens, 1 healthy fat, and 3 condiments.
Crock Pot Chicken Taco SoupBy KimThis hearty Lean and Green soup fills you up on a cold day. I chose to cook the chicken ahead in my Instant Pot and make the soup on my stovetop. I also substituted zucchini for the cabbage which worked out perfectly. Each serving is 1 Lean, 3 Greens and 2.25 Condiments
Sheet Pan Chicken Fajitas (in Lettuce Wraps)By KimThis Lean and Green recipe is so versatile and one of my favorites to make as a freezer meal. Use any meat to change things up (flank steak, center cut pork chops and shrimp are all great choices). I usually make them in the oven on a sheet pan for convenience but you can just as easily cook them on the stove top on griddle. Can be served on lettuce or a tortilla if not following the Optavia plan. Each serving is 1 lean, 3 green, 1 healthy fat, and 3 condiments.
Cheeseburger PieBy KimDelicious Lean and Green cheeseburger pie is perfect for satisfying your burger cravings without all the carbs when made in either a spaghetti squash or zucchini crust. The filling would also be delicious in a salad or lettuce wrap or as a loose meat sandwich on Crepini egg wraps. Each serving is 1 lean, 3 greens, and 3 condiments.
Garlic Butter Turkey Meatballs with Lemon ZoodlesBy KimThese meatballs are yummy even if not following the Optavia plan. I used beef and turkey for this Lean and Green and omitted the cheese. We enjoyed them over zoodles one night and cooked in a sugar free BBQ sauce served with cauliflower rice another night. Each serving is 1 lean, 3 greens, 3 condiments, and 1 healthy fat.
Cheesy Flakey BiscuitsBy KimThese biscuits are deliciously flakey with just the right amount of cheesy goodness and are now a favorite around here. They paired perfectly with my creamy chicken stew recipe!
Creamy Chicken StewBy KimMake this recipe using rotisserie chicken, canned chicken or even leftover turkey. It's so easy on a weeknight to throw it all together and have dinner on the table in just a few minutes. We love to pair this with cheesy flakey biscuits or serve it over egg noodles for a complete meal.
Creamy Garlic Alfredo SauceBy KimI make this alfredo all the time because it's a family favorite, not only over pasta, but also as the sauce for pizza, layered in a lasagna or even as a dipping sauce for garlic bread. It's so easy and tastes WAY better than the stuff in a jar from the store. I make it low-fat by using skim milk and it turns out great every time.
Shepherd’s PieBy KimThis meal is a kid favorite in our house and making them all happy is no easy feat. If you haven't had this classic dish in a while it's time to add it back into your menu rotation.
